Flat Bread Quesadilla


I had tried making quesadilla at home long time ago but it did not work out well since I made it with chappati.... probably the roti's I made were not firm enough not sure... after this attempt at making quesadilla which turned out to be a failure I never tried my hand at it again until recently. My dear H had got flat bread from Sam's and 2 packs of them were just lying the pantry because I did not know what to do with it. I wanted to try out something new with it.

My friends kids had come home and I wanted to make something yummy for them and this is what I made after searching the website I found in that package ... I made this as a starter for lunch and it was a big hit with them. I had cheese enough to make for 2 flat breads only ...they loved it so much that they wanted to have more of this and not rice and rasam... and even though they did not love red bell pepper they did not mind it in this at all :)

Ingredients:

2 Flat bread
1/2 Cup Finely Diced Bell Pepper
1/4 Cup Finely Diced Onion
1/2 Cup Shredded Cheddar and Mozzarella cheese
Finely chopped cilantro and crushed basil,
1 TBSPN Ranch dressing.


Combine all the ingredients and fill it on one half of the flat bread.
 Fold and press it well. Apply ghee or oil on both sides of the flat bread.
Heat the pan and cook them for 2 -3 minutes each side.
Enjoy with Ranch dressing or salsa!

I think it will make a good lunch box item too ....

Vendakai (Ladies Finger/Okra) Pullipu Thalir



 
 
We love Vendakai/okra so much. It is a favorite veggie in our house hold. Okra we love it in all forms as a dry veggie or as bindi masala. I remember having this long long time ago ... one of my paati's signature dishes. I had completely forgotten about this until recently ....and I asked Amma for the recipe. It is my Patti's porandhathu recipe (the one handed from her mom's family). These days I post the recipe in Facebook immediately since am not finding time to write in detail here. I made this sometime back but haven't found time to post the recipe for the same.
 
Ingredients:
 
1/2 lbs. Okra
3 - 4 Green Chilies
2 Red Chilies
Small Lemon Sized Tamarind (soak it in water and take the pulp)
Sesame oil for Tadka
Curry Leaves
Salt
 
Tadka - Mustard, Urad Dhal, Channa Dhal, Fenugreek (vendayam)
 
Method:
 
1. Wash okra and dry it well. Cut Okra to bite size pieces.
2. Slit the green chilies
3. Heat oil in a pan. Add the tadka, chilies and curry leaves.
4. Add the cut okra and fry it well. See to it that it does not get sticky.
5. Once it is 3/4th cooked add the tamarind pulp and bring it to a boil.
 
This recipe does not require any other spice powder or sambhar powder. Try it and let me know.
 
Serve it with rice... yummy .......
