Thengai Podi (Coconut spice powder)


It is a spice mix that goes well with hot rice..It comes in handy when you get bored of cooking  or want to keep it simple after a festival or a party.....It comes in handy after we come back from our India trip. with the jet lag. After I get back here I feel out of touch with cooking and miss the hot food (different varities) served back home.. .it comes in handy when I get back here and start adjusting to the routine and get on with the day to day activities..!.  I always get all podis from there. That way they come in handy when you land here.
Make rice and veggies.. Mix the podi with veggies and you can survive the first few days...Will also post paruppu podi, karuvepilai podi in another couple of days.

My mom made it before she left for India and it has come in handy for me!

Ingredients

1/4 Cup Urad Dhal
1/4 Cup Kadala Paruppu (Channa Dhal)
6 Red Chillies
1 Small Piece Hing
1 Cup Grated Coconut (I use dry fine coconut)
Salt to taste

Take a spoon of oil in a pan. Fry all the items listed above except the coconut. Fry till they are golden brown. You can use hing powder too add it to the spice powder after grinding.
Take another spoon of oil. Fry the coconut till it turns golden brown. Grind these together. Add the salt. Serve it with  hot rice. Store it in an air tight containter.
