Yesterday was one of the days I did not want to enter the kitchen....but that cannot happen right with 2 kids...so wanted to try something new (and that too the one which came with an "easy" tag attached to it) to boost my energy to fix the dinner..I wanted to eat something yummy...have been craving for an ice cream cake but my son is not fond of it ..he does not like cold deserts...I was browsing the food network website and in the corner I found ... a link."Most Popular Right Now" and right there sitting on top was the link for the recipe but this one called for eggs and I was hesitant to try it out...what if it did not come out good since it was an instant one.....but still ventured to try it out...consoling myself that at least it is not a difficult one and does not involve too much of an effort ...I used the recipe from food network as a base and modified it to suit my taste and preference. I was so happy it came out good and that too eggless and an instant one ...a bit dry but I did a warm chocolate sauce to compensate it.
Here goes the modified recipe ..........
Ingredients:
3/4th Cup All Purpose Flour
3 TSP's of Cocoa Powder
2 TBSP Unsalted Butter
1/4 TSP Baking Powder
100 gms Apple Sauce (used a jar of Gerber apple sauce - which I had handy...my daugther refused to eat it...)
3 TBSP Sugar
Finely Chopped Pecans (roasted) Optional
Combine the above ingredients in a microwave safe bowl. Sprinkle the pecan on top. Pop it into the microwave. It is ready when it gets puffed up. It took about 3 minutes in my microwave.
For the Chocolate Sauce - You may warm the store bought chocolate syrup and serve it with the cake. But I had chocolate chips readily available ...
(or ) - {I know this is not the way they do it...traditionally they boil the water in a vessel and take the chocolate chips and heavy cream in another bowl. They put this bowl on top of the vessel and melt the chocolate chips ..but as mentioned earlier ...am taking the easiest route...}
Take chocolate chips and milk in a microwave safe bowl. Keep it for a minute in the microwave. Take a look at it too see if the chips have dissolved. Give it a stir and then keep it for one more minute...do not keep it directly for 3 or 4 minutes. Once it is melted..you know what to do...right....
Take a piece of the cake....pour the sauce over it and enjoy when its warm ...you may also serve it with a scoop of vanilla icecream! Enjoy!
